🧪 Gum arabic panned nuts [CAFÉ] — Dissolve gum arabic 1:1 in water. Layer onto nuts: dip, sugar, dry, repeat. Creates hard, shiny shell. Professional dragée technique. Compare against simple caramelised nuts (W1) and praline.
Herb oil [CAFÉ] — Blanch herbs → ice bath → blend with oil → strain = vivid green oil. Uses: plating, on soup, on fish, on bread.
