Nappage / neutral glaze [CAFÉ] — 200g water : 200g sugar : 10g pectin (or 3g agar). Boil, cool to 60°C, brush. ↑pectin = thicker coat. Pectin = softer shine. Agar = firmer, more glassy. Every fruit tart from now on.

Strawberry preserve [CAFÉ] — 1:0.6–0.8 fruit:sugar + 1% pectin + 0.5% acid. ≥60% sugar for pectin to gel.
