Strawberry elderflower curd [CAFÉ] — Fourth curd. By now: curd is a platform. Any fruit + egg + butter + heat = curd.
Elderflower syrup [CAFÉ] — 1:1 sugar:water + elderflower. Same ratio works for any botanical: lavender, rose, chamomile. Infusion time is the variable.
🧪 Guar-stabilised vinaigrette — Add 0.1–0.3% guar to standard vinaigrette. 0.1% = barely noticeable body. 0.2% = holds together. 0.3% = getting thick. Compare with/without.
